High levels of phytic acid in soy reduce assimilation of calcium, magnesium, copper, iron and zinc. Phytic acid in soy is not neutralized by ordinarypreparation methods such as soaking, sprouting and long, slow cooking. High phytate diets have caused growth problems in children.
